What can I say that hasn't been said already. I've been using an Epson 7800 for years. It's good.
The Canon iPF8100 is GREAT!
(I can't wait for the Windows 7 drivers.)

We have owned the ipf8100 for about a year and a half now and it has been excellent. The print quality is outstanding and the speed is about average, although we mainly bought it for print quality. We run a lot of mixed line/graphic prints, and the results are stunning. We have run all kinds of media through it and outside of some issues with generic photo paper, it handles them all. If you need to use photo paper (satin, gloss, etc.) use the Canon branded paper. Generic photo papers have a tendency to not dry (ink smears).
Ink consumption has been great. When ran almost 9 months on the starter cartridges before replacing the first unit. A year and a half out, I am finally about to replace the last starter cartridge. I have not had to replace any of the replacement cartridges yet. Of course your ink life will vary depending on your usage rates, but we print around 50-75 large size (30"x42") prints a month. Outside of ink, we have only had to replace one maintenance cartridge (waste ink tank). The original print heads are still going strong and will hopefully last a while longer before needing replacement. They are expensive (~$600) and there are two of them in the unit.
We print a lot of PDFs and InDesign files to it and it RIPs them pretty darn quick. We have calculated what most of our prints costs us (ink plus paper) and we can print 30x42 sheets for under a buck. The printer tells you how much ink is consumed per print job, so it is easy to do the math.
You won't be disappointed with this unit unless you are looking purely for speed, as there are faster units out there (even Canons), but the quality is 2nd to none in this price range.

Cons: canon needs to organize their profiles better!
I purchased my Canon ipf8100 about 8 months ago. I am amazed at the quality every time I do work with it! I have done all types of projects including trade show graphics, banners, enlarged photos, posters and I have used all types of media including canvas, vinyl, fine art, photographic, Fab-Tac self adhesive vinyl, and back lit film. I have NOT HAD ANY PROBLEMS with this printer. It has been maintenance free. I am very happy with it! It has paid for itself in about 2 months and I do small jobs as more or less a hobby.

I purchased the 8100 tp print large format art quality prints from digital files. It has performed excellently. We use it for one of a kind prints as well as printing our own exhibit posters in large quantities. Comments from customers and viewrs are that they can't believe I can get such amazing detail and color on such large prints. I use it with Canon's Poster Artist which I have found to be the perfect software for the task of finalizing a project. Because of the quality and accuracy of both software and the printer I am able to directly print files without any intervening tinkering, which I really appreciate. Great job Canon!
